Cannabis Pumpkin Bread

Ingredients:

  • 3/4 cup wheat flour
  • 2/3 cup all-purpose flour
  • 1/3 cup cannabis olive oil
  • 1 cup pumpkin puree
  • 1/2 cup packed brown sugar
  • 1/3 cup honey
  • 2 eggs
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Cooking spray
  • Directions:

    Preheat the oven to 350 degrees Fahrenheit, place rack in the center of the oven and spray a 9 x 5 loaf baking pan with the cooking spray. Get out a medium mixing bowl and begin to whisk together both types of flour, baking soda, baking powder, cinnamon, nutmeg and the salt. In a separate, but larger, mixing bowl, mix the eggs, cannabis olive oil, brown sugar, pumpkin puree and honey until they have been thoroughly mixed together. Next, add the dry ingredients from the medium mixing bowl to the wet contents of the larger mixing bowl. It helps to add the dry ingredients a little at a time, stirring after each addition. Pour this mixture into the loaf pan and tap it on the counter so the contents settle and there are no air pockets. Place in the oven to bake for 40 to 45 minutes or until just brown on top. Let cool on a wire rack for 15 minutes and enjoy.
