Chocolate Chip Pumpkin Bread

  • 3 cups flour
  • 1.5 cups cannabis canola oil (see cannabis olive oil recipe)
  • 2 tsp. ground cinnamon
  • 4 eggs
  • 1.5 cups semi-sweet chocolate chips
  • 1 tsp. table salt
  • 2 cups pumpkin pieces (no seeds and mashed up)
  • 2 cups cane sugar
  • 1 tsp. baking soda
  • Directions:

    Preheat oven to 350 F. Get out a large mixing bowl and mix together the flour, cinnamon, baking soda and salt. Get out a separate mixing bowl and combine sugar, eggs, pumpkin mash and cannabis canola oil. Stir the contents of the second bowl into the first bowl with the dry contents. Mix thoroughly and subsequently mix in the chocolate chips. Get out two 8 x 4 loaf pans that have been greased with shortening and place in the preheated oven for 62 - 70 minutes. To test if it is done you can insert a toothpick into the center. If the toothpick comes out clean the bread is ready. Remove from baking pans after allow to cool on a wire rack for 10 - 12 minutes. Remove from pans and allow to cool more time, if desired. Serve and enjoy a classic Fall treat.
