Nutty Caramel Peanut Butter Bars
Preheat the oven to 350 degrees F, while lining a 13 x 9 inch baking tray with foil. Spray the foil with non-stick cooking spray. In an electric mixer, mix the brown sugar, butter and vanilla for the crust. Mix on a medium speed, until the mixture becomes creamy. Next, add the egg and peanut butter for the crust, before gradually adding the flour, salt and baking soda. Continue to mix, but on a lower speed, until thoroughly combined. Pour this into the prepared pan and bake in the preheated oven for 12 to 15 minutes, until golden-brown.
While the crust is baking, get out a medium saucepan, placed over medium heat and add the butter, brown sugar and corn syrup for the filling to this pan. Heat for 2 minutes, until it just begins to bubble/boil. Remove from the heat, subsequently mixing in the nuts and peanut butter chips, ensuring the chips melt. Spoon this over the crust from the oven, once the crust has been removed from the oven. Allow to cool or even chill in the refrigerator.
In a small microwavable bowl, combine the oil and chocolate chips for the drizzle. Microwave until the contents have melted, stirring in between as needed. Drizzle this over the bars and allow to chill again. Cut, serve and enjoy. You can freeze any bars that won't be eaten immediately.
