Peanut Brittle

  • 1 cup cane sugar
  • 2 tbsp. canna butter
  • 1 cup peanuts (whole or chopped)
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • Directions:

    First, get out a large cookie sheet and grease or butter it, subsequently setting it aside for the time being. Get out a 2-quart saucepan (or larger) and place it over medium heat on the stove. Put water, sugar, corn syrup and salt in the saucepan and boil it for 2 minutes. Make sure all the sugar has dissolved; you may need to stir while boiling to do this. Next, stir in the peanuts. Using a candy thermometer, place it in the mixture, attached to the side of the saucepan and continue boiling. Stir continuously until the temperature has reached 300 degrees Fahrenheit. Once it reaches 300 degrees, remove from heat, immediately adding the canna butter and baking soda, subsequently pouring it onto the cookie sheet. You may need to use forks to adjust the mixture so it is a square. Allow to cool and remove by breaking apart the peanut brittle.
