Stoner's Special Lemon Bars

  • 3/4 cup (1.5 sticks) canna butter
  • 1.5 cup flour (if you're really daring, try substituting cannabis flour from our recipe on this site for regular flour)
  • 2/3 cup confectioner's sugar
  • 3 large eggs
  • 1.5 cups cane sugar
  • 3 tbsp. flour (separate from the other flour)
  • 1/4 cup lemon juice (fresh squeezed is optimal)
  • 1/3 cup confectioner's sugar (used for topping final product)
  • Directions:

    First, preheat the oven to 375 degrees F and grease or butter a 9 x 13 baking pan. In a medium mixing bowl mix together the 1.5 cups flour, 2/3 cup confectioner's sugar and canna butter until blended thoroughly. After it's thoroughly mixed press it into the greased or buttered pan so that it is even throughout the pan and place in the oven to bake for 20 minutes. While it's in the oven mix the cane sugar, eggs, remaining flour and lemon juice. Don't be alarmed if it looks frothy or slushy, it's supposed to appear that way. When the crust is done, pour this mixture over the still-hot crust. It helps to time mixing the remaining ingredients so that you are done mixing them close to the end of the 20 minutes. Once you pour the mixture in the crust, place back into the oven for an additional 20 - 25 minutes or until it is slightly golden brown. Take out after the time is up, let cool on a wire rack and while it's cooling but still warm, sprinkle the remaining confectioner's sugar on top, if desired. Enjoy and try not to eat them all at once.

    If you used cannabis flour and all that butter, these would probably knock you out! Make sure to try and eat half of a bar, even without the flour this is a very potent recipe!

    Tried this recipe (twice!) It worked well. I melted the cannabutter in a glass measuring cup in the microwave. This allowed accurate measurement of the quantity, easy mixing and minimum wastage. (After getting all the cannabutter out that I could, I swished a little flour in the glass measuring cup. This allowed a bit extra to be extracted from surfaces. One caution is to mix the cannabutter w/ the flour and sugar and add the egg (prebeaten) last. If mix warm cannabutter directly with egg I was concerned the egg might cook a bit.

    Great recipe! I do a little more butter and 1/3 cup lemon juice+zest and they're killer! Maybe lower the temp a little and cook longer.. just be careful
