Zucchini Bread

  • 3 cups flour
  • 1 cup cannabis canola oil (use olive oil recipe)
  • 2.25 cups cane sugar
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts
  • 3 tsp. vanilla extract
  • 3 eggs
  • 3 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • Directions:

    Preheat the oven to 325 degrees Fahrenheit. Then, get out two 8 x 4 baking pans, lightly grease them with cooking spray, lard or butter and sprinkle with flour, shaking off excess. In a mixing bowl sift together the salt, flour, baking powder, baking soda and cinnamon. In another large bowl, beat the eggs, sugar, oil and vanilla, mixing well. Add the sifted ingredients into this bowl, proceeding to mix thoroughly. Next, mix in the nuts and shredded zucchini. Pour this mixture evenly into the two pans. Bake for 45 minutes to an hour, allowing to cool in the pan on a wire rack for 15 minutes. Remove from pan, place bread on wire racks and allow to finish cooling off.
